What does that mean? Oversimplified, it means locals open up their own coffee shops and family owned restaurants. The local market dictates demand, so the supply of these shops is self regulating. There's less of these stores, which means local employment can be sustained, and the wages therefore go back into the pockets of locals. Income generated from these businesses then fills the pockets of local owners, local employees, and the money stays in the local economy, enriching it.
