I’ve been going to the slaughter for years but beginning to see a horrible pattern. The butchers want pieces of your meat, steal parts of your meat, and sometimes resell it right there. I watched as a butcher picked up huge chunks of meat off the floor that they accidentally dropped while cutting a cow for a customer. When the customer left, they picked it up. Those would cost about $50 at Walmart. Yesterday, we arrived before noon, picked 2 goats, they slaughtered them immediately, and we took them to the back to burn with a blow torch. When we got to the back, 3 people were using it. Two guys were burning cow skins, and two women were burning small slices of cow skin with one torch. We needed to be out of there in 2 hours to get home before the kids arrived from school. We were also 2 hours away, so we really needed to get going. I walked up to the guy to ask him if he could allow us to use the torch for 30 mins. I was ready to pay him. Before I could say hello, he waved me off rudely without eye contact. I backed off. Then I went back to the owner to ask if there’s another torch on site we could use because we were in a hurry. The owner came out and told the third guy who was also his employee to allow us to use the torch. The guy stepped away, and we began roasting. Less than 30 minutes later, we were ready to wash the goats, but the pressure hose wasn’t working. We waited for the owner again, but this time, the first guy who waved me off saw me struggling with the hose, walked around, plugged it into their office, then tested it, saw that it was working fine, didn’t say a word to me, he went back and unplugged it, and then went to bring his burnt cow skin to wash while I was standing there. I saw what he did and quickly told my husband to go and plug it in the office like the guy did. The man rushed over to me to collect the hose, and I said in pidgin, “If I was you, slap!!!” “What do you think you are doing?” He backed off, mumbled something like, “I have work to do! I don’t have time.” “And I don’t have work to do? I don’t have a place to be? So you can speak? You work here and you wouldn’t assist paying customers? Better stand there and wait until I’m done.” He stood there for like 20 mins watching me hose the hell out of the goat. My husband took over and held on to the hose until the goat was sparkling clean. We dropped the hose and he quietly ran over to grab it. It was while waiting to cut the meat that I saw one of the butchers moving chunks of beef they picked off the floor. How did those big pieces end up on the floor? Because the customer wasn’t paying attention. Then came the scavengers begging people for internal organs for free. Someone drove from home to come beg for beef internal organs at the butcher. Things are happening.

Igbo people do not add sugar to yam porridge. And Igbo people do not pour beans inside pot, add water and ingredients, then start cooking it like that. We cook it halfway first, pour away the first water like rice, then add fresh water before adding ingredients and seasoning. Yes, Igbo people use crayfish to cook almost everything apart from stew and you people should try it. I genuinely do not know where some of you learnt your cooking from.
