I was told that I should've trimmed the fat before smoking the brisket. We love fat, so I left it on. What do you think? Trim the fat or leave it on?

@wilsonhlthcoach IT'S THE BEST PART. I'm always horrified at BBQers who cut the fat off before it's done. Dumbest thing ever. They do this at Katz's Deli, too. It's painful. You choose, in each bite, how much fat you want. Some days it's a lot, some days it's a little.

@WhatsNewsHere @wilsonhlthcoach Fat isn't moisture. Fat is fat. Moisture is water. The flavor an moisture don't come from fat on the outside. It comes from intermuscular fat and connective tissue.

@galluccinet @wilsonhlthcoach Wrong. If you leave too much fat, it inhibits smoke penetration. And an untrimmed brisket has a terrible ratio of fat to meat. The fat you want is intermuscular, not on the surface.

@wilsonhlthcoach Leave it on. Fat is flavor and fat is fuel. The cap renders down into the bark and keeps the flat from drying out. Anyone telling you to trim a brisket before smoking it is optimizing for presentation, not the plate.

my house is paid off. no mortgage. nothing owed. got the new property tax bill today. if i don’t pay it, armed men show up and take the house i “own.” i already pay 35%+ in income tax, sales tax, gas tax, capital gains… but apparently that wasn’t enough. so do i actually own anything? or am i just renting from the government with extra steps?

My landlord raised my rent $340. I asked why. "Market rate adjustment." I googled my landlord. He owns 34 properties. Manages them through 3 LLCs. Lives in a $1.3 million house. Has never fixed my heating properly. My rent increase is his mortgage payment on preperty number 35. I am not a tenant. I am a revenue stream who gets to sleep here.
