@wilsonhlthcoach Insufficient smoke ring. I trim the brisket fat cap down to a little over 1/4". Put the cutoffs in a pot and and render in the smoker while the brisket cooks. When you get to the wrapping stage, pour the rendered, smoky fat over the brisket for the final cook.

I was told that I should've trimmed the fat before smoking the brisket. We love fat, so I left it on. What do you think? Trim the fat or leave it on?

I am astounded by the number of millennial families who moved to Dallas, bought a home, then turned around and sold the home to move out of Dallas, in less than a 5 year time span Is Dallas just super transient or is this a post-pandemic phenomenon happening everywhere?

Not sure where you are experiencing Tex-Mex but cilantro-lime wouldn't be of importance. Heavy reliance on cumin and ancho chiles. Tex-mex all started with the chili con carne queens in San Antonio and eventually transitioned into the "combo plate" serving it with refried beans and rice. Cheese and sour cream added into to draw more gringos to the restaurants. Thank the Lord for Sonny Falcon, Otilia Garza, and Ninfa Laurenzo for bringing beef fajitas mainstream. As far as char on the beef, not sure what places you are visting but they are the wrong places. Head down to south Texas next time you are here. :)
