Mediterranean Spinach Grilled Cheese with Sun‑Dried Tomatoes
Serves: 2 big sandwiches • Prep: 10 minutes • Cook: 10 minutes
Ingredients
4 slices sturdy bread (sourdough or country white)
2 tbsp butter, softened (plus more as needed)
1 tbsp olive oil
2 cups baby spinach, loosely packed
1 small garlic clove, minced
Pinch kosher salt and black pepper
1/3–1/2 cup oil‑packed sun‑dried tomatoes, drained and sliced
4–6 oz low‑moisture mozzarella or provolone, shredded
2–3 oz feta, crumbled (for tang)
1–2 tsp Calabrian chili paste or red pepper flakes (optional heat)
1 tsp dried oregano or Italian seasoning
1–2 tsp fresh lemon juice or zest (brightens)
Optional add‑ins: a few basil leaves, thin red onion, or olives (sliced)
Instructions
Wilt the spinach
Heat olive oil in a skillet over medium. Add garlic; cook 20–30 seconds until fragrant.
Add spinach, salt, and pepper; toss 1–2 minutes just until wilted. Off heat, stir in lemon juice/zest. Transfer to a plate and pat dry with paper towels to remove excess moisture.
Build the sandwiches
Butter one side of each bread slice.
On the unbuttered sides, layer: half the mozzarella/provolone, the wilted spinach, sun‑dried tomatoes, feta, a pinch of oregano and chili flakes, then the remaining mozzarella. Top with the second bread slice, buttered side out.
Griddle low and slow
Warm a clean skillet or griddle over medium‑low heat. Add sandwiches; cook 3–4 minutes per side, pressing gently, until bread is deeply golden and cheese is fully melted. Reduce heat if browning too fast; the goal is melty centers and crisp crust.
Serve
Rest 1 minute, then slice. Finish with a sprinkle of oregano or chili flakes. Great with a simple tomato soup or a balsamic‑dressed greens salad.
Tips
Dry fillings = ultra‑gooey centers without soggy bread. Blot spinach and sun‑dried tomatoes.
Mix cheeses: melty (mozzarella/provolone) + tangy (feta) gives stretch and flavor.
For extra crunch, spread a thin layer of mayo on the outside instead of butter, or do half‑and‑half.
Variations
Chicken boost: add thin slices of grilled chicken.
Pesto twist: swipe 1–2 tsp basil pesto on the inside of each slice.
Vegan: use plant butter and vegan mozzarella + a little vegan feta; sauté spinach in oil.
