@chibbqk1ng I am curious why "incubator" was the hope, as it seems like things like Time Out Markets are more setup to bring a lot of local higher/mid-level places to a single spot (catering to tourism). I would think tourism follows food trends, rather than be a catalyst for them.

That’s what I thought they would be. Interestingly enough it looked like in the early days of ghost kitchens that they would all be Chick-fil-A’s and Chili’s but that hasn’t been the case completely. At least not in Chicago where there’s been some interesting ghost operations.
