Virtually no one would see the end of the 500 years without finding a way to die first, whether accidental or intentional. Humans are far too fragile, particularly trying to navigate a bizarre world where physics is not working normally, by themselves. The profound loneliness and the dangers of operating alone in an environment with stopped vehicles, motionless weather, and other frozen elements would make it almost impossible for anyone to survive the full period without eventually dying by accident or on purpose.
Additionally, this hypothetical needs to be much clearer about what is possible in this world where time has been shut off. If everything is frozen in time, you would not be able to interact with anything. You would wake up in this scenario trapped under the blankets on your bed. The attempts to allow engine starting and services to continue do not fix the fundamental problem that basic physical movement and interaction should be impossible in a truly time-frozen world.
