People who suffer from gout are metabolically unhealthy. While meat or shellfish may trigger gout in a metabolically unhealthy person, they do NOT cause gout. The issue is an imbalance between uric acid production (primarily by the liver from fructose and alcohol like beer) and impaired uric acid excretion by the kidneys due to insulin resistance. When the body is oversaturated with uric acid, consuming purine-rich meat can trigger a gout attack, but as I explained, the meat was never the underlying problem. The proof of this is that most people who adopt a low-carb diet and eliminate alcohol, including those on a carnivore diet, see gout disappear as insulin resistance improves.
