Okay after reading this paper and another (Lim et al. 2015) i was wrong. The mixture with the air when shaking degrades the protein structures so it can be mitigated with less headspace, buffers, or surfactants. So it's not technically the common idea that shaking them breaks them apart but the incorporation of air (bubbles or foam). Don't shake you research hGH lol.
