For the young folks learning how to pack a lunch: There are two things that elevate a sandwich. The bread and my secret topping. I know this because I worked in my dad's deli for years and we made subs that flew out the door. Buy French bread in the long loaf. Cut it to sandwich sized chunks and seal it in a ziploc. Topping: chop onions, pickles, tomatoes into small chunks in a Tupperware container. Pour some pickle juice over it, salt and pepper. Let that sit in the fridge overnight. In the morning make your sammy with your preferred meats and cheeses, (mayo and mustard recommended) on the French bread with the pickled topping. Pack an extra pickle on the side. You'll think you ate out. You're welcome.

That was a wild 24 hours. To make it easier to share in the future I'm going to turn the Pizza Doc into a website with a built in calculator. (This is my Saturday project...) That'll have my dough recipe, sauce recipe, links to what I use, tools I use as well (I'll try and hunt for an alternative to my Crofton Pans for y'all). Most of the questions were pretty good. Going to include the questions and answers along with some other specific tips that I taught my friends in person when I showed them how to make pizza. It's the things I wish I knew when I started making pizza around 2016 that would've saved me a lot of time and money. TL;DR go make some pizza this weekend.

I ruined going out to eat for my family after I graduated from college in 2017. Because what I made tasted better, was cheaper, usually faster, and it didn't make us sick afterwards. The easiest win was pizza. I've made over a thousand pizzas since I graduated in 2017. It takes less than 5 minutes of work and you do something else for an hour while you wait for the dough to proof. You can make batches of dough and just have it chill out in your fridge for the week. My go to recipe is 300g water, 500g of bread flour, 12.5g of salt, 10g of sugar, 3-5g of yeast, and if you feel like it 20g of oil. That gets you 2- 14 to 16 inch pizzas or 4 personal size pizzas. The same dough can make a pretty good loaf of bread, bread sticks, calzones, stombolis, etc. Make your own food. It's 100x easier than you think.

home depot has fallen off... bunch of disinterested people walking around with scanners and no expertise that place used to rule. you'd have a project and a 67 year old ex-foreman named Big Jim would walk you through your entire project. no more... my local Ace Hardware is where it's at now. that's where Big Jim and Joe and Old Ed, the guy who owned a plumbing business for 30 years, work now... happy to help and talk your ear off about washers and lug nuts for twenty minutes... you know, the good stuff.

This is literally how it works in every other country: in order to change your visa/obtain residence, you have to leave if you're already there. When I lived in Mexico, I had to return to the U.S. and go to a consulate to get my residente temporal. Got what I voted for again!
