Many technical mistakes We posted about 30 seconds flip many years ago, seems guga has mentioned this recently ;) 1) don’t need a water test 2) salt before, then salt after you cut 3) use 100% wagyu tallow, not other 4) he set the crust too early, which is why you see a gray band 2-3 minutes before flip is a technical error and defeats the purpose of the 30 second edge to edge medium rare which was not achieved. 5) many of his cuts were cut with the grain.
