It’s very easy to fall out of your routine when a big life event happens. As hard as you try to show up for yourself and your family, your body knows you are not whole. My nervous system knows it’s not really me here. I’m not sure when I’ll fully show up again. Maybe I have to accept that I’m a new person now. On May 23, 2026, a new chapter began for me. One without my father. One where I had to step up in an entirely new way for others I don’t know when my nervous system will find its baseline again, but until it does, I’ll keep doing my best. Some days that means remembering him and smiling instead of crying. Other days it means not eating foods that don’t serve me simply because they’re easier right now. One thing that has never changed is knowing that Dad loved us, and we loved him. Our baking mixes and recipes have honestly helped me through the stressful moments. When everything feels heavy, having something simple that supports my health instead of working against it is one less thing to think about. Today, that looks like a proper lunch at home: a tuna fish sandwich on a ROSETTE’S Low Carb Bagel. Thanks for sticking around. If you’ve been thinking about trying our mixes, maybe today is the day.

I tried @Rosettesmix pizza and bagel dough and it's a good way to treat yourself without mistreating yourself. That is, if you can tolerate almond flour and the 40-45g of carbs that make up this entire pizza, sauce and cheese included. You start by melting shredded cheese in the microwave, then adding one egg and then the mix. The crust took me about 25 minutes of baking to get it how I liked it while the box said to cook it 5-10 minutes. Then it took another 15 to cook the toppings. The end product reminded me of a peanut butter cookie combined with a pita. It's a little crumbly but more than firm enough to hold sauce and cheese. It's incredibly filling and more than adequate to scratch a pizza itch. I still have half a bag of dough left so I'll probably make some bagels with those.

Today marks 2 years since I lost my mom and it still doesn’t seem real, I don’t know why but I felt compelled to share the eulogy I had to prepare because my uncle who was supposed to give it, got sick and was unable to, love you mom. I want to honor the life of my mother today, She was a remarkable woman who touched the hearts of everyone she met. At 83, she left behind a legacy of love, kindness, and unforgettable memories. Born and raised in Kentucky, She was a wonderful mother, grandmother, wife, friend, and family member. She lived a life filled with acts of kindness, always ready to lend a helping hand. Whether volunteering at church, assisting her neighbors in her senior apartment building, or simply being there for those who needed her, my mom’s generosity knew no bounds. One of her greatest joys was going on bus tours with her cousins and friends and taking trips with her family. Despite the busy lives we lead today, she always cherished the times when everyone could come together. She understood the demands of life and always spoke highly of her family, sharing stories of her experiences and looking forward to family gatherings. My mom was not just a loving mother; she was an extraordinary one. Unable to have children of her own, she adopted me in 1973 and raised me with unconditional love and care. Through tough times and good times, I could always count on my mom. We were inseparable, doing everything together. A simple grocery run often turned into an all-day adventure, filled with stops at garage sales, stores, and visits with friends and family. Her granddaughters were the light of her life. She constantly asked about them, proud of everything they accomplished and eager to share their achievements with anyone who would listen. She felt the same pride for me and my wife, always happy with how our lives turned out. My mom was a strong woman, unafraid to speak her mind. She had her ways, especially regarding food, a fact well-known by the hospital and nursing home staff. Her sense of style was unmistakable, as many of you have seen in the photos displayed today. She achieved many things in her life, but one of her proudest moments was graduating from Carousel Beauty College as a cosmetologist and later becoming an instructor. As a talented seamstress, she made countless dresses for weddings and proms, working out of our apartment. However, her true passion lay in making quilts and, in recent years, creating jewelry. She dedicated countless hours to crafting beautiful pieces, especially for her granddaughters and the medical staff who cared for her. Moms generosity and big heart were evident in everything she did. If you needed her, she was there. If you needed something, she did everything in her power to help. Her kindness, love, and dedication to others knew no bounds. We could spend all day sharing stories of the amazing person she was and the countless lives she touched. Many of you have your own memories and experiences that highlight her loving and caring nature. She will be deeply missed, and our lives will never be the same without her. I feel incredibly blessed that she chose me to be her child. It was a privilege to call her my mom, and I will always treasure our time together. As we remember Mom today, let's celebrate her life and the love she shared with us all. We are here today mourning the passing of Mom. Still, I am sure many of you are thinking about the people in your life who have passed; I have no doubt my mom is with them all right now. They are all here with us today, and they would all tell us they're ok, and they love us, and to not be sad and to enjoy our lives, and spend time with our loved ones and enjoy every second of the time we have with them, and they will see us again someday.
