Now why did Israel and the US convince the UAE to quit OPEC and OPEC+, that's the really interesting question.
My guess is: the UAE was promised fast reconstruction and investment in its energy sector after the war if it basically agreed to give Israel and the US free access and probably some ownership as well. In return, they will get rid of Iran for them. I'd imagine that that's the deal
