@SBakerMD I make butter mayo. Great recipe, easy to make and follow the suggestion to add the whites back in, keeps it smooth and creamy. Closest to store bought that I've tried.

1756, in Mahón, Spain during the 7 years war, a French chef had to substitute olive oil as cream was unavailable for an egg based sauce.
This supposedly led to the creation of what is now known as mayonnaise.
Throughout the 18th, 19th and much of the 20th century Olive oil was the primary oil used in mayonnaise.
When it became mass produced and needed to be made shelf stable, most manufacturers switched to soybean oil as it was cheap, abundant and had a neutral flavor and could stay on the shelf for years.
