I have to disagree on this one. We don't do Skinsuit playing at my table. We use 1:1 time to allow players to interact with the world in more immersive ways than just adventuring. They can do their training, research, shopping, etc. outside the table as the world progresses. Then we can focus on adventure and roleplay when we are at the table. We have 200+ players in my campaign, and 10+ referees. With games running almost nightly. Players usually play a refereed session once or twice a week. In the off time, they roleplay as their characters on the server. Some players take the route of simple orders such as: "XOR will train for the next 4 days, and then do some shopping" Or other may just text roleplay with other players in the town. After a week in the real world passes, a week in the game world cycles. This allows for more roleplay opportunities, without scheduling constraints. And allows you to step into an immersive game. Can you run an immersive game without 1:1 time? Of course, especially if you keep a good calendar. However it's much easier to just let time progress. Side note. I am not a member of the Brosr. I don't think I am claimed by that group, and I've never met Jeffro. In fact I didn't know he existed until about 8 months ago. I talk about 1:1 time in Barrows & Borderlands because it's what we have used for over 5 years in campaign. As such, I can only write about things I do. I agree with you on so much, but I don't think a game can be considered "non-immersive" just because you don't pause it. Roleplaying games are games where players assume a role. That's it. Adventure Games are games where players go on adventures. These terms are fairly self explanatory.
