Delicious Chicken Recipe — 2 Cooking Options
(This chicken is EXTREMELY VERSATILE & may be paired with a number of carb sources/veggies/sauces)
Ingredients:
Very simple here…
- Boneless/Skinless Chicken (Breast/Tenderloins)
- 1 Grill Mates Chipotle Pepper Marinade Pack from McCormick ***PER POUND OF CHICKEN***
- 2 oz of oil per marinade pack (see instructions on pack)
- 2oz of water per marinade pack (see instructions on pack)
Now, there are TWO different ways I prepare this chicken…
Way 1:
If planning to use in tacos or consume in isolation, I dice the chicken (breast) prior to marinating in a large ziplock bag
I then marinate for a MINIMUM of 3 hours before air frying — sometimes I will leave it sit in the bag for days (using bit by bit) before I air fry it and no I don’t care if you think I shouldn’t do that (I’ve been doing this for YEARS with ZERO ISSUES)
When air frying, it’s usually 1-1.5 minutes @ 400° per oz of chicken being cooked
Flip it a few times throughout
No need for storage because it is always cooked on the spot direct from the ziplock bag marinade
Way 2:
If planning to use in wraps or with veggies…I use TENDERLOINS, cut out the tendon with scissors, and then marinate in the ziplock bag
Same deal as far as marination time goes on the MINIMUM
In this instance, I use the cast iron skillet on MEDIUM heat cooking all the chicken AT ONCE
It is usually 3-4 minutes per side but you’ll need to trial & error it / maybe use a meat thermometer (I used to do this before I got good at just nailing it without)
Store in glass containers or something like that — it’s good cold but you can reheat on pan when you go to eat it if you want it warm
