'Gas' is a loanword from Dutch, in which the word first appears as a scientific concept in the 17th century. It's thought to derive from Ancient Greek kháos (hence 'chaos'), with Dutch approximating the initial 'kh'-sound of the Greek with the fricative sound of Dutch G.
