Evolution has no foresight or end goal, but for cats to naturally thrive on a purely plant-based diet, their physiology would need major rewiring - new metabolic pathways, better plant digestion, restructured teeth and jaw, etc... That level of adaptation would take several million years of intense selective pressure, such as an environment with no animal prey where only plant-tolerant cats reproduce successfully.
