it depends on how complicated the central nervous system is. even jellyfish who dont have brains are considered sentient and should not be eating because of their central nervous system. the rule of thumb is, is the central nervous system sensory or just for transport of nutrients. a sensory nervous system like in a venus fly trap plant or water bear will react to touch. the central nervous system on normal plants like bluebonnets, sage, daisy's, grass, wheat, or any plant that produces fuit and vegetable does not respond to touch and is just for tranportation of nutrients so it is ok to eat.

Non vegetarians adjust for guests, vegetarians expect others to adjust.
