So all of a sudden it’s perry pear harvest time. Apples are more tolerant but pears which ripen from inside out can be rock hard one day and a sludge the next! Brought in just over 200kg of Dyers Pass pears and scrattered them. Today pressing the pomace. #pears #perry #scratter

Tannins give cider its flavour and colour It reacts with an enzyme in the presence of oxygen when the apple is turning into pomace in the scratter The enzyme transforms the tannins into quinones These are unstable and quickly react with amino acids to form melanin like compounds

@NigelSommelier It does depend on the pub I think. Pubs need all the customers they can get these days. But too many dogs in a small space can be unpleasant particularly if owners are unable to control them. It’s also difficult to limit the number if you accept them. A dog friendly room possibly

@BriggsonBeer Tilray is the 4th largest craft beer company (not brewery) in the US apparently and has a $100million joint venture with AB InBev according to Wikipedia. So Brewdog will probably fit quite well. I don’t think anything that size could constitute being called ‘craft beer’.

Breaking: Scottish independent brewer, BrewDog, has been sold to US drinks company Tilray, for £33m. The purchase includes its U.K. brewing operations, brand and their 11 pubs. Interesting to see what develops in the future, since its inception in 2007. 🤔Agreed?

@BriggsonBeer It’s in a lot of chain pubs and those owned by likes of Punch/Stonesgate Plus due to the Sky deal, if a freehouse sells a 9g a week they could save a fortune as part of the wider deal

Experiments in Britain's forgotten ferments... I've made my first batch of natural wine! No yeasts added. It's gooseberry wine & it tastes great! I need to let it settle really. I sieved the lees & spotted some jellied bits. Anyone know what microbe may be responsible?

How this once rich,malty smooth beer has deteriorated since the Carlsberg takeover. Banks’s Bitter(3.4%).It now has a sharp, pungent note that overrides the caramel flavour. A soft metallic taste is also identified too,in the bitter aftertaste. Sadly, a most distasteful ale.🤢
