Do you have a slow cooker? Slow cooking vegetables enhances the bioavailability of certain veggie compounds by breaking down cell walls. These include: 1. Carotenoids Beta-carotene in carrots becomes 6.5 times more bioavailable compared to raw versions. Lycopene in tomatoes rises 50 to 70% after just 30 minutes of heat exposure. 2. Minerals in Greens Slow cooking reduces oxalates, compounds that block mineral absorption. So, your body takes up more iron, calcium, magnesium, and zinc in spinach and similar leafy greens. 3. Fiber Although slow cooking doesn’t reduce the fiber content of vegetables; it softens the food matrix, so your gut can process them easier.
