@burgessdryan Dry brine in brown sugar and salt over night. Then soak in water for a couple hours to pull the salt back out. Then open air for a couple hours. Then smoke.

What’s your favorite way to marinate salmon?

@burgessdryan Whatever you do… after marinating let it sit in open air (in fridge if you want) for an hour or 2 before cooking and it’ll make it glossier/more visually appealing.

@burgessdryan Last night we had it marinated in spicy peach sauce. Pan fried then finished in the broiler, served on coconut rice. Holy crap, tasty. Matcha tapioca pudding for dessert 😋 Gonna try one of these other ideas tonight.
