Secret Army (TV show) Podcast

Everyone worships the ribeye and walks straight past the brisket, and I've decided this is one of the great injustices of the meat counter. Look at what you're ignoring. Brisket is the cut that did the work, the muscle off the front that held the whole animal up, which means it's stacked with connective tissue and collagen, the stuff people now buy in a tub as a fancy powder. You don't need the tub. It's in the brisket. Cook it low and slow and that collagen melts into gelatine, the very thing that props up your own joints, skin and gut lining. Add the glycine in there, which most modern diets are starved of, and the iron, the zinc, the B12, and you're looking at a genuine nutritional heavyweight, not just a treat. And the fat cap. Glorious. A thick seam that renders down over hours into something silky. The bit the timid trim off and bin is the bit that makes brisket sing. Then the part that should annoy you. It costs a fraction of the ribeye. More flavour, more collagen, more actual nourishment, off one of the cheapest cuts in the shop, while everyone queues to pay triple for the prestige steak. And it feeds you for days. One brisket is Sunday dinner, Monday's cold cuts, and a pot of the richest bone broth you've ever made. It asks one thing of you. Patience. Salt it, put it in the slow cooker in the morning, go and live your life, come back eight hours later to something that fell out of the realm of gods. The machine does the work. You take the credit. So stop genuflecting at the ribeye. The best value, highest collagen, most forgiving elite cut in the building is sitting right there being overlooked for not being glamorous. Go and get brisket. Thank me in eight hours.

On phone 14th time with @Bell who keeps calling for account that closed April 7, equipment return acknowledged Apr 28, final bill paid May 10. Collections keeps calling, takes 2 billing cycles for equipment return to be in system. Meantime, they’re destroying my credit rating.

Last night I went to dinner at a Brazilian steakhouse. I ALWAYS eat beef well done. I don't even like to see a little pink in it 🫣 The beef they had was medium to medium rare. I paid a lot for this dinner so I figured I might as well try it. It was DELICIOUS!! 😋😋😋

@omgsidewalks Yes. We played champ in the square of the t-junction near our house. Someone called, “sidewalk” as a car approached and we sidewalked until it passed. Be home for supper and then by dark, those were the rules.
