@GreeneElizabeth @RobProvince Oh I'm a thermometer checker too, but when the 12 pound turkey finishes in AN HOUR AND A HALF AT 325 when you were just opening the oven for a baste and noticed the leg meat had shrunk away from the bone already....oof

@hezster @RobProvince Overcooking sucks. We're obsessive about thermometer checks. The water isn't a bad thing for us we brine it anyway. It makes a significant difference in tenderness with low-and-slow overnight cooking.
