What makes pastoral systems hard to measure is exactly what makes them work. They are mobile, adaptive, and responsive to variability. In Tunisia, 15,000 tons of camel milk are produced each year. Only 1,000 tons are recorded. The rest flows through informal pastoral markets, efficient, adaptive, and largely invisible. Pastoralism isn’t marginal.
