Today at Meatstock was wild 🔥
Carnivores everywhere… felt like home.
Worked the Carnivore Bar booth so of course I crushed some pemmican 💪
Lunch: brisket + eggy waffles + lime egg pudding
Spotted Dr. Ken Berry mid-bite like a gremlin… missed my chance 😂
Dinner at Dick's Last Resort = got roasted by the waitress AND had a surprisingly good steak

Hit the road this morning—Meatstock, here I come! 🚗🔥 Started the day with a cup of broth, dropped my kiddo off, then drove 2.5 hours to my sister-in-law’s where we squeezed in a walk together. Back on the road to Gatlinburg! Lunch = cold chuck roast (honestly hits every time). 4.5 hours later… I made it 🙌 Quick walk, hotel check-in, then straight to dinner. Beef brisket + smoked chicken from Bennett’s Barbecue 🤌 I am DONE for the day 😴 Ready for Meatstock in the morning!

Day 100
100 days since my daughter moved home with such severe health issues that I didn't think she was going to make it.
100 days of taking her to appointments, being her advocate, educating her about her condition, teaching her about what to eat.
100 days of helping her shower and dress, washing all her clothes and linens, making all her food, emptying her commode, cleaning her room, giving all her meds and insulin, taking her vitals, checking her blood sugars, etc.
100 days of watching her have breakdowns and breakthroughs, setbacks and triumphs, feeling frustrated and helpless, then feeling happy and hopeful.
I seriously thought we'd be further along in her recovery by now, but I remember that this is our journey, one that God intended for us, and we're right where we're supposed to be.
101 days ago, my husband, son, and I all had a discussion and we felt that bringing her home after her discharge from her 4th hospital admission was going to give her the biggest chance of survival, even if it was a small chance.
I didn't even know how serious her health issues were because, at the time, I had no access to her records, and she had never really taken an interest in understanding her illness.
I had to approach it as an ICU nurse with my knowledge of the critically ill and what I assumed was happening within her physiologically, but when I got her home, I saw firsthand how bad it was.
I've spent 100 days watching her frail body not give up.
It has taken at least 5 years for her body to get to this point. It could take another 5 years for her body to get better.
Her eyes will be fixed and she'll have teeth, but her bones and muscles need to rebuild.
Her pancreas has irreversible damage and has already rebuilt connective tissue in areas where there should be cells secreting insulin and enzymes.
I don't know the damage her gut has, but with the fact that she still has diarrhea even with 100 days of using pancreatic enzymes, I'm assuming the damage is extensive.
I'm not sure how damaged her bladder is but I do know that it's happier when her blood sugars are well managed.
She might have to take enzymes and insulin for the rest of her life.
She knows that some of the damage is irreversible, but only God knows the outcome.
Yesterday:
Morning Glucose - 65
BP - 106/66
Blood Sugars & Insulin Use
Her blood sugar got up to 204 yesterday evening. That was after eating a little bit of potatoes for breakfast, a tuna sandwich for lunch, and some fish with rice.
She took a total of 10u Humulin-R along with her normal total of 24u basal insulin.
Blood Pressure
I typically only check her BP in the morning or when I suspect it to be extremely low.
She now knows that her lightheadedness is caused by low BP, and she can recognize when it's happening.
Yesterday, she had no lightheadedness all day and she used her wheelchair to come into the kitchen twice to get something to eat.
Bowel Movements
Still many stools all day and they all look the same.
She had a lot of stool through the night before, and said she didn't sleep well. Then she had 5 more throughout the day, all loose or soft. Then more last night.
I can't wait to see her GI doctor this week and talk about this issue.
When we saw him back in Feb, he said all she needed to do was get her blood sugars under control and take her enzymes with every meal, and she'd start having normal stools and putting on weight within no time. Well, over 2 months later, we've done all that, and she still has diarrhea.
It's heartbreaking to see such good, nutritious, homemade food going straight through her.
Hopefully it's a good visit.
