I baked another loaf of #sourdough this morning early before work, it had been cold proofing in the refrigerator since 2:30pm yesterday. It's made with 10% stone ground dark rye flour, it has a tangy sour and rye flavor! Apart from not scoring it deep enough for a more pronounced oven spring, it's magnificent.

In 1938, on the streets of Austria, a Chinese officer appeared in a German uniform. The man in Wehrmacht gray was Chiang Wei-kuo, the adopted son of Chinese Nationalist leader Chiang Kai-shek. It may sound impossible today, but in the 1930s China and Germany shared close military cooperation. German advisers were helping modernize the Chinese army, while Chinese cadets were sent to Germany for elite training. Chiang Wei-kuo was among them. He enrolled at a military academy in Munich and eventually served in the Wehrmacht as a lieutenant. During the Anschluss—the annexation of Austria—he commanded an armored car platoon. Soon after, he took part in operations in the Sudetenland as German forces absorbed border regions of Czechoslovakia. For a brief moment in history, a future Chinese general wore German field gray during Europe’s prewar expansions. But by 1939, before Germany invaded Poland, Chiang was recalled to China. The world was shifting, alliances were breaking, and war in Asia was intensifying. Back home, he served in the Nationalist forces against Japan. After 1949, he followed Chiang Kai-shek to Taiwan, continuing his military career there. From Munich to Vienna, from Europe’s rising storm to China’s war against Japan, Chiang Wei-kuo’s story is a forgotten chapter where global politics crossed in the most unexpected uniform. © MilitaryHistoria #archaeohistories

I started my sourdough bread dough autolyse process this morning at 4:30 am when I checked on my sourdough starter while letting the dog out (she's a 12 year old Anatolian/Pyrenean mix with incontinence issues), finished the stretch and folds and started the bulk fermentation process around 7:20 am. According to the temp chart, it should have a 30% rise around 12:50 pm, at which point I'll start the shaping phase before the final cold proof in the fridge for 12 to 24 to hours before baking.

He's not just defending AI energy use. He is smuggling in a whole anthropology where humans are basically inefficient meat computers that you have to pour food and years into before they become useful. And once you accept that, the next move is obvious. If people are just costly biological training runs, then burning mountains of electricity to build synthetic intelligence starts to feel not only equal, but superior, even if it negatively impacts actual humans. That is the dystopian. It makes human development sound like a bug in the system, and it makes sacrificing human and creational flourishing for more computational power sound logical. To him, the grid gets strained, prices go up, ecosystems get hit, but hey, humans eat too, so what's the difference? The difference is that humans aren't an inefficient line item. They're the point. If your worldview can look at a child growing into an adult and describe it as energy spent to train intelligence, you haven't said something profound. You've revealed a horrifically rotten worldview.

@HowiePepper Yeah, it was apparent about 10 QSOs in. I had used my back packing stove to make lunch (Ramen Bomb = Ramen and instant mashed potatoes) before setting up my rig.
