#Montreal Food Tour: Day 5 When you enjoy fine dining, it’s the little things that make all the difference—like warmed almond milk so my coffee stays piping hot. A sprinkling of crystalline Maldon sea salt on the butter quenelle for the toast. A juice blend that was very clearly freshly squeezed. My day didn’t start off great. I’m a little hungover (thank you, Le9e), and I tried to navigate the RESO pre-café. It popped me back on the surface level and then I proceeded to walk two blocks too far in the pouring rain. When I arrived at the Four Seasons, I took the elevator to the wrong side of the restaurant (bar side) and wondered why the hell the restaurant was empty at 9am. When I finally oriented myself and found the correct entrance, the gorgeous space at Marcus took my breath away. The lighting, oh my word. Yes. Bright, contemporary, stylish. I was seated at a nook by the window under a little palm tree. Kitchen view. The music was upbeat and cheerful, just what I needed to get my day going. I ordered the Québécois Breakfast, which came with a delicious coffee, fresh-squeezed fruit juice, eggs, bacon, hash browns, toasted crusty sourdough, and a classic croissant. The eggs were tender, delicate, and perfectly cooked. The bacon did its bacon thing, and the toast was a delicious vessel for dredging up the satiny egg yolks. The attention to detail was top notch, but I was quite disappointed with the Denny’s-style deep fried potatoes. After breakfast at the Ritz and their exceptional duck fat potatoes, I was really surprised that Marcus would just phone it in. I was expecting roasted potatoes or pommes pavé, not processed cubes (they were, however, well-seasoned). The croissant was AMAZING. I’ve eaten millions of croissants (I was a commis chef en pâtisserie et chocolaterie at the Lodge at Kananaskis) and know they’re one of the most complex laminated viennoiserie to nail—and so, so easy to undercook. This was spectacular. Crispy, flaky, buttery, full puff between each layer, melt-in-your mouth. I’ll have dreams about this pastry. Side note: if you’ve never split a warm croissant and doused it in preserves, you haven’t lived. The service was friendly and attentive, but it took a while for them to clear my plates and the other diners’ tables around me. Little thing, but they should be watching for when we’re done to whisk the dishes away so we can enjoy our coffee in tidy surroundings. As a young chef, I idolized famous chefs like Marcus Samuelsson and Daniel Boulud, so I wanted to check out their namesake restaurants during my visit. (Sadly, there’s no Ritz or Four Seasons in Edmonton). Maison Boulud nailed it. Marcus was very good, but it could have been better. Marcus: ⭐️⭐️⭐️⭐️/5 $$$$

#Montreal Food Tour: Day 4 Exceptional caffe latte at Cafe Olympico. I don’t know what the little pastry was but yum yum yum. Shout out to Justin for the food and beverage reccos for my visit. Dude wrote me a list in between orders! The hospitality here is something else. As soon as you say you’re here for the food, Montrealers get very passionate! Off to Le Plateau I go!
