@JesseMixMan @leschnosebest @Grill_Meister At my restaurant we brine>poach fry>cool>fry. Smoking=poach. When you cool the wings it pulls the excess water to the exterior of the wing so when you fry the moisture releases and the crispness will be unmatched

I drank about a gallon of fluids and still lost 6 lbs of water since I left the house this morning. I worked until my brain stopped functioning and I got sick to my stomach. Figured that was a good sign to pack it in for the day.
