Oxtail is exceptional. Been slow cooking the meat then further cooking down just the bones and connective tissue to make broths. Can see all the gelatin after refrigerating. Insane how good it is.

Whenever I need more wool for the business, I take a 10 hour (round trip) drive to the Montana mill with a van and trailer. Today is the first day I hired someone to do this for me. I thought I’d be relieved not to make the long solo drive but it’s actually bittersweet. Waking up at 4am, sneaking out the house to the brisk cold with a steaming cup of coffee. A Lone Ranger on the highway. Some Waylon through the mountain drive, watching the sun come up the Pass at the Idaho-Montana border. All the time in the world to think on the open road. It’s a good feeling to build something. It’s a sad feeling to lose the seemingly mundane tasks along the way.

Kicked off my plastics project yesterday and hoping to have something to share next month. Please upvote the things you think we should test: plasticlist.org The main goals are to: (a) test a bunch of California food for various plastic chemicals and report the results, and (b) do a lit review of the field and assess how strong the evidence is that microplastics in the levels found in our food supply are actually bad for you. We'll share our methodologies and findings transparently on plasticlist.org so you can replicate what we do. Stretch goal is to develop "lactaid for microplastics." That might take longer than this summer though. 🙃

Styrofoam is such a diabolical material. Crumbles and falls apart, then gets everywhere with a static charge that clings to things so you can’t easily get rid of the small pieces. Takes 500 years to break down. Can’t be good for humans either.
