@JasonLett @GreatrixBrad Sure, I can agree with that. But I think that even more important than “fewest” is, as you say, intention, or the quality or transparency of that intervention. Putting wine into barrels is intervention, but clearly you’re very careful about what sort of barrels you’re using.

@JasonLett @GabrielClary @GreatrixBrad Sometimes I question our notions of purity and non-intervention in wine. How much process does the langoustine dish at L’Assiette Champenoise require? Does that make the taco I’m eating right now superior because it’s less “manipulated”? Michelin doesn’t think so.

@JasonLett @GabrielClary @GreatrixBrad No, not at all. It’s just that some results require more process to achieve.

@JasonLett @GreatrixBrad Are single-vineyard champagnes intrinsically superior to blended ones? Is a Yo-Yo Ma cello solo intrinsically better than listening to the LA Philharmonic? If Yo-Yo Ma plays a concerto with an orchestra, do the other instruments negate or diminish his expression?

@JasonLett @GreatrixBrad But as @GreatrixBrad says, the expression of terroir isn’t just about single-vineyards. We’re trained to think that because of Burgundy. Champagne works under a different paradigm. It’s not an opportunity lost, it’s using specific characters in a greater whole.

@JasonLett @GreatrixBrad The method enhances expression (of all sorts of things, including that of terroir) rather than diminishing it. It’s arguably why it was invented in the first place. Even in today’s climate, no Coteaux Champenois is as good as the best Champagnes.

@JasonLett @GreatrixBrad There’s a straightforward way to assess this empirically: go to Champagne and taste vin clair, then taste the same wine as champagne. Which has the greater expression? 100% of the time it’s the latter.
