For me, Femina has always been more than a magazine — a lifelong friend, philosopher and guide. From shared roots to shared tables - carrying India’s kitchen to the world. @HardeepSPuri ji & I met India’s Michelin 3-star chef & restaurateur @TheVikasKhanna at JFK airport - a chance meeting that became a thoughtful exchange on the Indian kitchen as a space of values: food as seva, respect for original ingredients, restraint over excess, and a hospitality that doesn’t merely perform - it is simply unself-conscious He spoke about his mission to make Indian cuisine a truly irresistible global phenomenon, and that philosophy explains why his engagement with food extends far beyond the plate and the palate. In many ways, Vikas is an Indian cultural and civilisational ambassador. As diplomats, we have long experienced how Indian cuisine functions as one of India’s strongest assets — a powerful Brahmastra of soft power. Whether hosting at home or engaging abroad, food has been central to how India builds trust, warmth and connection across cultures. This understanding of cuisine as culture runs deeply through Vikas’s work as an author. With over 40 books, he has built a remarkable archive of Indian food and tradition. His Sacred Indian Food project stands out as a monumental archival work exploring the relationship between faith and food - from temples and monasteries to community kitchens such as langars - so substantial that it requires a dedicated stand, underscoring the civilisational weight it carries. Alongside this, Utsav maps India’s festivals as a culinary epic, while Khanna Sutra, Flavors First, Return to the Rivers and Barkat together reveal food as love, memory, geography and compassion. The same ethos animates his restaurants - from the Michelin-recognised @Junoon to @thebungalowSM - spaces that invite participation rather than spectacle. A recent visit by Ranveer Singh and @deepikapadukone, who joined the kitchen to prepare pomegranate-cardamom modaks, reflected the warmth and shared joy that define the experience. Beyond fine dining, his Indian simmer sauces created for @Walmart carry this philosophy into everyday global kitchens. Across books, restaurants and mass retail, Vikas Khanna is presenting Indian cuisine to the world not as a trend or novelty, but as a living civilisational practice - rooted, generous and confidently global.

A story carried by conviction! At the Mumbai launch - Surya Samvad, listening to Dr Narendra Jadhav speak about Swallowing the Sun felt quietly reassuring. He spoke of the book as a journey guided by history and moral choice, rather than noise or display. What stayed with me was how he traced Malati’s path - from मुंगी उडाली आकाशी to तीने गिळिले सूर्याशी - a growth that is gradual, earned, and deeply human. That reading, shared at Surya Samvad, stayed with me long after the conversation ended.
