I saw about wanting sake at a BBQ, and I need to say this:
I make sake for a living using traditional Japanese fermentation methods.
And sake is only part of the story.
Miso, soy sauce, vinegar—these too are part of a living fermentation culture passed down for generations.

In Japan, we also have a cloudy sake called doburoku, and there were times in the past when people brewed it illegally and things got pretty difficult because of that.
Strong but smooth alcohol is the best.

@sakegorilla Moonshine has always been made here.
It became more popular during Prohibition, as any liquor made was illegal.
There are fewer folks who make it now, and it's really an art.
Good moonshine is 120 proof or more, and very smooth.

@JdaroThe @PoltFan69 So yes — just like wasabi, each sake can carry the character of a particular place, a particular brewery, and a particular group of craftsmen.

Each brewery has its own toji (master brewer) and brewing team, and across Japan there are also regional lineages of toji guilds — skilled brewing communities with their own methods, judgment, and traditions.

@J_Coriolanus There are so many good ones, but some I’d happily recommend are Takashimizu and Hideyoshi from Akita, plus Kenbishi and Kiku-Masamune from Hyogo, Kaiun from shizuoka.
They each have their own personality, and I think they’re all great places to start.

There was a fantastic malt bar called Moonshine in a place where I used to live.
That name has roots in the Prohibition era, right?
In Japanese, we have the word jizake—“local sake.”
Every region has its own sake, shaped by the food, culture, and life of that place.

Both make moonshine and sell it legally, but the taste of both is very different.

Sometimes I go camping, grill himono over the fire—dried fish, seasoned and roasted—and drink warm sake with it.
It sends you straight to heaven…

@sakegorilla I love nigori unfiltered, there is a bottle wrapped in banana leaf that I like. But I’m not very educated on sake.
