The cops hate independent sting operations like this. The main reason is these civilians can't arrest them or seize their devices so this basically just alerts them to cover their tracks before the cops get involved. Think about it. They get let go after the filming is done (because again, these are civilian stings) and then they go home and nuke everything before the cops arrive. The cops not being involved gives these creeps an opening to escape and destroy evidence. By the time the cops get involved there's no more evidence.
