Let me take a stab at this: I think "Father" simply carries a different tone. It's more respectful and formal, while "Dad" feels too casual. Especially when someone is disrespecting him to your face, "Father" reinforces his authority and the respect he's due. It's why many people pray to their "Heavenly Father," and not their "Heavenly Dad." This is really about the tone of the English dialogue in what Nolan himself has called a "period piece." For me, it broke VERISIMILITUDE. Nolan has also said it's up to the audience to decide what the film ultimately is, and it's clear this particular choice has been immersion-breaking for a lot of people. If others think it's a nitpick, that's fair. But art is subjective, and everyone has the right to judge it based on whatever details matter to them, whether they're big or small.
