@tired65231 @ChefGruel In my (limited) experience : people at the event create a bell curve distribution and after the initial rush, that the caterer can prepare for, the demand normalizes. We’ve had food trucks at parties and other functions (not weddings) and it has worked very well.

I recently went to a wedding with a pizza truck. It was amazing. People loved it. Wedding hotel or catering food has gotten so expensive because of the hotel model. They rely on overpriced catering to cover the cost of their vacant rooms. But it’s gotten so out of control, to have a plated wedding with overcooked chicken and microwaved green beans, it’s $150 per head. A food truck can do unlimited pizza for $30 a head and it will make their month. Throw in a taco guy and it’s better than Alinea.
