I am a pretty simple woman. I do not understand why shipping American beef to China is such a great thing. Beef prices here are high. Herds are smaller. There is a drought. Are we going to ship our beef out and import it from other countries? Make it make sense. Find someone in your region that sells direct to you. Buy a freezer. Learn how to cook different cuts of beef. You will thank me later. Do the same with pork, lamb and chicken. Buy local in season fruits and veggies. It's doable.

A picture I shared recently with a post about picking up 1/4 beef. Some people commented that they thought this looked a lot more than just 1/4. Want to clarify, this picture isn't 1/4. This is 1/2. The ground beef is in the boxes, which I also have a separate deep freezer for. I'm not picking up my 1/4 until next Monday. I was using this picture to show what type of beef I get and how I think it's important to support local ranchers if you have them. I get so many cuts and I use them all. Steaks, roasts, brisket, soup bones, ground beef, oxtail, etc. I get offal like tongue, heart, and liver. I also get the suet to render into tallow. When I buy beef, I usually get 1/2. I haven't purchased 1/4 in a long time. I'll share a picture on Monday of what the 1/4 is like and what cuts I got 😉

Told my local rancher friend that I'm ready to stock my freezer with more beef. She knows a little about what's going on in our lives with my daughter. She knows it's taking a toll but says I'm doing God's work. I usually buy 1/2 beef at a time but told her I could only get 1/4 right now. She said she understood and then offered to drop the price per lb. I told her I appreciated the offer but that I'd pay full price. No need to give me a discount. The cattle they raise are worth the price, and most of the cuts are still cheaper than what I can get at the grocery store. That's what doing business with local farmers and ranchers is all about. We are all part of this community. What I pay them for their beef goes back into their kids, their business, their cattle, and the community. Supporting each other is how small farms and ranches stay in business. It's how a community thrives.
