@lucypattinson28 Remove legs strip from bone and place to one side. Strain fat and add back to meat until desired consistency is achieved Add a touch offresh squeezed orange juice to meat and season to taste. Excess can be placed in to jars and sealed with melted butter and placed in fridge

@lucypattinson28 Take a take a deep roasting pan or similar Place legs in with fresh thyme, Garlic to taste, Bay leaves, Fresh rosemary, Nutmeg, Black pepper, Grated orange and lemon zest. Cover with 50% Goose/Fat 50% Rapeseed oil. Cover with foil and place in oven at 90 degrees C for 8hrs
