Because fatass American kids are fed pizza, fries, mac and cheese and nuggies by their fatass American parents so if the school tries to serve them salmon, it'll end up straight in the trash can.

The seed oil debate doesn't concern me. Regardless of their health impact, I never buy them because they're inferior ingredients; bland or outright unpleasant, which makes them culinarily irrelevant in my kitchen. Good meals deserve butter or olive oil. Don't settle for less.
