Its because of railroads and relatively flat terrain. See those squiggly lines out east? Mostly (but not entirely) due to rivers, mountains, valleys, stuff like that. As the country expanded west, it was influenced by the railroads, which mostly go in straight lines through the relatively flat terrain until you reach the rocky mountains. And since the states were drawn with that expansion plan in mind, they mostly had straight borders and boxy shapes.
