There are a lot of grains that only required being shucked. You can process barley and millet with your hands and eat it by just heating water. In eastern Europe they still eat buckwheat
Even most wheat was eaten in "berry" form. Wheat bread was something special. One of the great cultural and technological achievements was the communal mill and that happened well into the medieval period
