For me it's been a bad year, made the very hard decision to close my very own restaurant, which took a lot of hard work to make happen and very sad to have to close. so I'm looking forward to ending this year! Bring on 2024 please!

Trimming this bad boy up a bit and starting a ~24 hour dry brine. Planning on cooking this tomorrow for friends and family. If my math is correct I believe this will take ~120 minutes at 250 in the oven to reverse sear to my desired doneness, but I may go buy a thermometer today just in case 😂

@jrmallcock @jiwingad I've recently has someone write nearly all positive then slate me for a "luke warm side of new potatoes and over cooked broccoli on the other side. Busy Saturday, it was a mistake but just let me know I'll send out fresh! Not worth the review if the rest was bang on!

@jiwingad I mean in good places, where largely what you’ve experienced is great, they obviously care and are trying and small issues u might have experienced are caused by the above reasons I listed. Obviously if you’ve a genuine complaint over food quality like you say, then complain away

Why do people expect restaurants to just give food away? And I mean at any point, never mind in the current economic climate…. If you order something that is or isn’t on the menu (as is the case here) it’s chargeable, I don’t think that’s unreasonable 🤷🏻‍♂️
