embarrassingly it is the first time I've tried @stuartdeeley menu @LaghisDeli Stracciatella / wye valley asparagus / peach / garlic / chill. Queenie Scallops / smoked tomato / preserved lemon. Spaghetti Carbonara with shaved truffle. This made me close my eyes with delight.

Ester, a restaurant in Sydney, Aus, is experimenting with ‘pasta concertina… one very long sheet of pasta gathered together like the bellows of an accordian, then wood-fired until crisp on the extremities’. A second iteration is filled with béchamel. London, come on now.
