It is a fact of history that Jesus Christ rose from the dead.
No other explanation can account for all the data. Here is what we know for a fact happened in history:
1. Jesus Christ was killed by crucifixion.
2. He was buried in the tomb of Joseph of Arimathea, a rich man and member of the Sanhedrin - formerly his enemy.
3. Jesus' death caused the disciples to despair and lose hope, believing that their leader was dead.
4. Jesus' tomb was found empty a few days later.
5. The disciples had experiences that they believed were literal appearances of the risen Jesus.
6. As a result of these experiences, the disciples were transformed from fearful doubters into bold proclaimers of the resurrection message.
7. This message was taught very early, within months of the crucifixion.
8. The disciples were willing to suffer and die for their belief in the resurrection.
9. James, the skeptical brother of Jesus who had not believed in him during his ministry, became a follower after an experience he believed was an appearance of the risen Christ.
10. Saul of Tarsus (later known as Paul), who was an enemy and persecutor of the early church, became one of Christianity's most prolific evangelists after an experience he believed was an appearance of the risen Jesus.
11. The resurrection message was the central proclamation of the early church and led to its rapid growth despite intense and oftentimes brutal persecution.
12. The resurrection account was proclaimed in Jerusalem, the very city where the events occurred, where enemies of Christianity could have easily disproven it, if false. They didn't.
No explanation can account for all of these facts of history except that Jesus Christ of Nazareth really did rise from the dead, as prophesied in the Old Testament for thousands of years.

Different perspectives certainly account for some of the contradictions in the Bible.
The vast majority of stories in the Bible, especially the doublets are by different people, at different times, and for different reasons.
However when one story says it happened on one day at a certain hour and the other story says it happened on a different day on a different hour, these are mutually exclusive. Only one can be right, both can be wrong.
The crucifixion, resurrection, and Ascension stories contain mutually exclusive stories. Anyone reading them side by side objectively is aware of this.

Everything you stated in this post is wrong.
A. There is tons of historical evidence that supports the fact that the Romans placated the customs of the people they conquered as long as it didn't affect Roman authority. They regularly allowed Jews to bury their dead, even after crucifixion, to prevent revolt. Pontius Pilate was notoriously pragmatic and yielded to Jewish pressure multiple times in history, recorded by Josephus and Philo. Josephus explicitly records that Jews buried the bodies of those crucified by the Romans before sunset as a matter of custom. Jesus wasn't a single exception - it was common.
Furthermore, Pontius Pilate believes Jesus was innocent. Leaving crucified victims up was a warning and a deterrent, but if Pilate believed Jesus was innocent, he would have happily allowed His burial upon request from a wealthy and well-connected man such as Joseph of Arimathea. It is highly plausible and easily believable.
B. You write "mutually exclusive" crucifixion stories as they all disagree. But they're each cohesive, self-attesting narratives, told from different perspectives - therefore highlighting different details. This is not contradictory - on the contrary, it's what we would expect if each narrative were written from a different author with a slightly different perspective. It's 100% consistent. The core narrative is the same in each Gospel + only slight details differ, which actually enhances the Truth claim of the documents, it doesn't detract from it.
C. Luke and Acts don't contradict. They affirm each other. Luke doesn't say the ascension happened on the day of the resurrection. It compressed the entire narrative, from resurrection to ascension, into one short section, but it never mentions an explicit time frame. I don't think even Ehrman argues this is a contradiction. Only someone giving the most uncharitable interpretation possible can argue this is a contradiction. For those interested in honest exegesis, there is no contradiction. It is perfect harmonization.
None of this refutes the facts surrounding the resurrection.
