Epistemology is a bit of a terse subject to read haha but it is very fascinating if you like philosophy. I'm not the most up to date on secondary literature, but if you want the classics, Berkeley is the father of idealism. Descartes is technically a realist, though I'd argue with his method of doubt to prove certainty, he's not a good realist. Locke and Hume are your empiricists. I read this in college and it was very helpful for finding the primary sources: Modern Philosophy: An Anthology of Primary Sources. Epistemology as a distinct area of philosophy really doesn't come to its own until the 18th century. Van Til is your classic Reformed guy obsessed with epistemology. He's definitely a realistic but I'm not a Van Tillian. His work on epistemology is worth reading though. Then for a non-Van Till guy, Fesko's Reforming Apologetics talks about it a bit. There's a lot I could suggest on metaphysics and realism too. Hope this helps as a start!
