I've working on these steak for 2 days, and we finally got to eat it last night. It was phenomenal. I started with a 24-hour dry salt cure in the fridge, followed by 3 hours in the sous vide, then another 2 hours in the fridge on a drying rack, and finally a seer in tallow, finished with garlic butter and flake salt.
