It’s actually a very good and interesting question and no proper answer given here that is actually an explanation. There are some puzzles, the distinction between dark side and far side in particular, and why we always see the one face of the Moon. The latter potentially obscures the fact that the Moon also spins, but it spins 360 degrees in the same time as it orbits the Earth which is why we always see the same face. At full Moon before the fly past the far side would be dark but still illuminated by starlight. The Artemis II earthrise photographs have similar ISO and exposure as the 1968 orignal, and the Nikon D5 allows a fair bit of shadow detail retrieval. The illuminated crescent of earth parallels the illuminated crescent of the Moon in the foreground in the earthrise pictures. The look different to 1968 on account of the vantage point being so much farther beyond the Moon.
