Homemade Dragon Fruit Chickpea Pop-Tarts
Sweet. Bright pink inside.
Soft pastry outside.
And nobody ever guesses the secret ingredient.
Once people find out what’s in them, the reaction is always the same:
“Wait… chickpeas?!”
But after the first bite, they usually ask for another one.
If you’ve never baked with chickpeas before, this might be one of the easiest and most surprising recipes to try.

Homemade Chickpea Dragon Fruit Pop-Tarts
Ingredients
For the dough
• 1 can Goode Foods Garbanzo Chickpeas, drained
• 1 cup flour
• 2 tbsp sugar
• 1 tsp vanilla
• 3 tbsp melted butter or coconut oil
• pinch of salt
For the filling
• 1 cup fresh dragon fruit (mashed)
• 2 tbsp sugar
• 1 tsp lemon juice
• 1 tsp cornstarch
For the frosting
• 1 cup powdered sugar
• 2 tbsp dragon fruit puree
• splash of milk
• pinch of vanilla

Instructions
1️⃣ Preheat oven to 350°F
2️⃣ In a blender or food processor combine:
chickpeas
melted butter
vanilla
sugar
Blend until smooth and dough-like
3️⃣ Add flour and salt and mix until it forms a soft pastry dough
4️⃣ Roll dough on parchment paper and cut into pop-tart rectangles
5️⃣ In a bowl combine dragon fruit, sugar, lemon juice, and cornstarch.
6️⃣ Spoon filling onto half of the rectangles, then place another piece of dough on top.
7️⃣ Press edges together with a fork.
8️⃣ Bake 18–22 minutes until lightly golden.
9️⃣ Let cool slightly, then drizzle dragon fruit frosting over the top.
