@GeriPerna Hard crack is when you drop a bit into cold water it becomes hard. You don’t need a thermometer. You just keep cooking until you get the hard crack.

Last week I posted about my Mom making hard tack candy at Christmas. Several people asked for the recipe, here it is: Don't panic, but my Mom wrote recipes with the bare minimum instructions! I just know this: You have to use a candy thermometer. There is a temp that is marked Hard Crack on the thermometer. It is for hard tack candy. The sugar, corn syrup and water get boiled to that temp. Remove from the stove add 1 Teaspoon of the flavoring oil, and food coloring. You can pour it onto a pan, or my Mom rolled it out in a long snake on the kitchen table and cut WHILE SOFT ENOUGH into bite size pieces. Let cool, than put in a bowl and cover with powdered sugar. This keeps the candy from sticking to eachother. Each batch makes 1 flavor. She made 10 flavors!

@GeriPerna I made this in high school using oil of cinnamon we got from the pharmacy. I poured it into muffin tins and let harden. Sold them at school bake sales for a quarter. They always sold out first.

The Governor of New Jersey is expressing outrage over claims that detainees at the Newark ICE facility are being denied basic human rights. And I'm over here screaming welcome to the party! This really makes me sick. Where was that concern when the Biden government did what it did to my nephew, Tim and the many men and women he was languishing behind bars with actually being denied basic human rights. The irony is that Tim, despite what he was accused of, was actually treated decently at Essex County Jail, not far from Delaney Hall where this chick claims the opposite. There was even a wonderful woman at the jail who helped me tremendously in staying connected with Tim before he was moved. But once these January 6 defendants entered the federal system, everything changed. Many were put through what can only be described as “diesel therapy,” shuffled around before ending up in the DC jail, where men and women were held in conditions that were in fact inhumane. So if we are going to talk about basic human rights, let’s talk about the one nail clipper shared among 54 men. Let’s talk about meals that were nothing more than sliced bread and condiment packets some days. Or the SOLITARY CONFINEMENT that was months long. Let’s talk about families being denied visits for more than a year. I did not see Tim for over one year. He sat in pretrial detention for more than a year before he ever went to trial. And Tim’s story is not isolated. There were many others suffering before him, alongside him, and after him. The hypocrisy is maddening. Democrats suddenly discover "human rights" and "due process" when it fits their politics, but they had no concern for the due process rights of American citizens who did not support their party. That is what is so despicable. And what is almost as disgraceful is the silence from so many Republicans who refuse to stand up and confront the two-tiered system of justice we have all watched unfold for years. And we are not going to pretend it did not happen.
