Ingredients: • 1 can Goode Foods whole kernel corn (drained) • 1 cup water • 2–3 tbsp maple syrup or sugar • 1 tsp vanilla extract • 1–2 tbsp cornstarch (for thickening) Instructions: 1. Blend corn + water until completely smooth 2. Strain to create a silky “corn milk” 3. Pour into a saucepan and add sweetener + vanilla 4. Heat on medium, stir constantly 5. Add cornstarch slurry and keep stirring until thick and creamy 6. Let cool, then chill for 1–2 hours That’s it. It’s creamy, slightly sweet, and tastes like something you weren’t supposed to discover. Save this… because you’re going to make it twice.

Before I went to culinary school, I worked at an upscale resort. The chef there told us if we wanted to get paid more, we had to learn the fundamentals and pass a test - mother sauces, classic French derivatives, garde manger, ingredient identification tests, the whole thing. It could take 1 week or 1 year; it was up to the culinarian. One of the hardest benchmarks was the perfect braise. I practiced after work for weeks (living in an apt with other cooks of course). Bone-in chicken became my go-to, not because it was glamorous, but because it was cheap, forgiving, and cooked fast enough that I could still squeeze in five hours of sleep before the next shift. It said the things the empathy chasers wanted. It eradicated the landed elite, men like Ian Smith, and replaced them with a violent demagogue who ruled in the name of “the people" "Empathy" meant the old hierarchy was wiped away in the name of racial and social equality, as such was considered more "moral" and "just" We now face the same thing.
